 Santa Fe Shrimp Pasta
Is an easy shrimp dish, so simple that you can make it at any time, but, it is special enough to serve for company. This recipe is very versatile, if you don't like shrimp, try it with chicken, it's a winner either way.
Santa Fe Shrimp Pasta
1lb linguini noodles, cooked according to package directions 1 ½ lbs Shrimp shelled and de-veined.* (1) 1lb. jar Alfredo Sauce* (1) 1.25 oz. Package taco mix (these vary in size so whatever is close will work fine)* 1 tbsp oil 1 tbsp butter
Boil water for linguini noodles, add salt. cook noodles according to package directions. While noodles cook, heat frying pan with oil and butter, add shrimp cook till no longer translucent and lightly pink. sprinkle taco seasoning over shrimp, stir till coated allow to spices to heat for about 30 seconds. Add Alfredo sauce, stirring well, if sauce appears a little thick, use about ½ C milk to shake up what ever sauce is left in the jar and add to shrimp mixture. heat till hot, toss sauce into cooked, drained noodles. serve hot. garnish with crushed tortilla chips if you wish. Serves about 4
