Quesadilla

This basic recipe is pretty much just a mexican style grilled cheese sandwich, perhaps it's the look, the tortillas or how easy they are to hold that makes kids love them so much.

This basic recipe is so easy to add to and dress up, add chunked cooked chicken, great way to use leftover meats and veggies too.

Quesadilla

 Basic Quesadillas

1 Package soft flour tortilla shells

1 tablespoon olive oil

1 Package Shredded Montery Jack cheese

1 Jar salsa

1 cup sour cream

lightly brush one side of tortilla with oil, place oil side down on frying pan, on med to med low heat. sprinkle with cheese, about 1/2 cup per quesadilla. Lightly brush second tortilla, place oil side up over tortilla in pan. brown lightly on both sides. The medium low heat, allows the cheese to melt without burning the tortilla. be careful when flipping the tortilla, so you don't dump out all the cheese, use large spatula.

To Serve. Cut into 1/4 sever with side of salsa and sour cream.

Makes 4 to 5 quesadillas.
