Lime Gelatin Cake with Whipped Topping
An easy and inexpensive way to dress up a simple cake. It becomes two treats in one, use your favorite gelatin flavor, or go ahead and try the lime, the flavor enhances a cake with a subtle citrusy sweetness.

Lime Gelatin Cake with Whipped Topping
1 box yellow or white cake mix (2 layer type) 1 box 4 serving size Lime gelatin 1 container Cool Whip thawed but cold
Serves about 12
Prepare cake mix according to package directions in a 9X13 inch pan, set aside. prepare gelatin according to package directions using the quick set method. To ensure the correct amount of ice is being used, take one of your ice cube trays (empty) pour 1 cup water, it should fill the tray completely, if not, see how many ice cubes 1 cup of water makes in your tray and use that instead of the cold water in the gelatin recipe. Using a straw or the handle of a wooden spoon poke holes in your cake going through to the bottom, try to keep an even pattern if possible and make them about 2 inches apart, so each piece of cake will have some gelatin in it. (I use a wooden spoon handle, makes bigger holes, holds more gelatin. ) Chill in the Refrigirator for about 45 minutes or until set, Spread Cool whip style whipped topping on top of cake like frosting. Chill till ready to eat..
