Crock Pot Beef Stew
Simple to prepare, you can cut your vegetables the night before, while you are preparing that day's meal, place in baggies and keep in fridge overnight.

Crock Pot Beef Stew
1 1/2 lbs. Stew Meat in bite size pieces 1 Cup sliced carrots 4 stalks Celery sliced 1 Medium Onion chopped 6 potatos, peeled and chunked into bite size pieces 4 Tbsp. Olive oil 2 Cloves Garlic chopped 2 Tbsp. Tomato Paste 1 tsp. salt 1/2 tsp. pepper 1 tsp. Paprika 1 bay leaf 1 pack brown gravy mix 1 Cup water
Serves 6 to 8
Directions: Turn crock pot to high add oil, garlic, beef, tomato paste, gravy mix, salt, pepper and paprika, stir to coat. layer carrots, potatos, onions, bay leaf and celery. Allow to cook on high for about 1 hour or until you need to leave for work.
Add water, turn crock pot to low and allow to cook covered for about 6 to 8 hours. Stir well before serving.
If your gravy looks a little runny, stir 2 teaspoons of cornstarch into 1/4 cup water, stir into stew, allow to cook on high for about 20 minutes or until thickend.
