Fabulous Cheese Cake
My family prefers it with pineapple, as the instructions show. You can use your favorite fruit topping, all berries work well, fresh blueberries are fabulous Strawberries are always great, specially when in season, and fully ripe.
This recipe creates a creamy almost custardy cheesecake, not stiff or dry, If you prefer the New York Style cheesecakes, this recipe is not for you. This consistency is completly different from the New York style. Very creamy with loads of flavor, Bakes in about 40 minutes.
Fabulous Cheesecake
3 prepared pie size graham cracker crusts. Or Graham Cracker Crust:
1 Box of graham crackers 1/2 Cup Butter or Margarine melted 1/4 Cup sugar
The Crust: break graham crackers into small pieces and place in a food processor, process to a bread crumb consistency. Add sugar and butter
process until combined. Pour into a 9 X 13 inch pan and press to form to the bottom of the pan. Bake in a 325F oven for 10 minutes.
Cheesecake:
3 (8oz) packs Cream Cheese (room Temp) 5 eggs 1 tsp. Pure Vanilla Extract 1 Cup Sugar (granulated)
Beat cream cheese at low speed until creamy, add sugar and vanilla, continue beating until thoroughly mixed and creamy. Turn speed to medium
high and begin adding one egg at a time till each is well combined before adding the next. Continue until all eggs have been added. The mixture should be quite thick. Pour mixture onto the prepared crust or crusts, bake at 350 for 30 minutes. See sour cream topping.
Sour Cream Topping:
1 1/2 16 ox containers of Sour cream 3/4 Cup Sugar (granulated) 1/2 tsp. vanilla
Mix all ingredients until well combined, pour over hot cheesecake. Bake in 350 F oven for and additional 5 to 10 minutes. Refrigerate, for at least
1 to 2 hours before cutting. When cooled top with sliced strawberries, blue berries, or crushed pineapple, well drained.
This recipe will make one large 9 X 13 inch cheesecake or 3 small ones in those prepared crusts that come in the foil pans, good idea when
taking to a party, no dish to return.
