cookiesNo Flour Peanut Butter Cookies

It just doesn't get any easier than this. This recipe is perfect to start out any cookie maker wannabe in your home, However, since there is raw egg in the dough, please... No eating the cookie dough, It is just not worth taking the health risk. These cookies bake up quickly and make a wonderful snack. Try some of the suggested Variations for a quick change that is still 'oh, so simple' and 'oh, so tasty'. Great beginner recipe.

No Flour Peanut Butter Cookies

1 Cup Peanut Butter
1 Cup Sugar
1 Egg
1 tsp. Vanilla

Preheat oven to 325F
Spray cookie-sheet with non-stick cooking spray.
Combine all ingredients in a mixing bowl Until Mixture holds together.
Roll into balls about 1 1/2 in diameter. Place on cookie sheet and flatten
with fork dipped in sugar (sugar will adhere to fork tines if you dampen
the fork first.) making criss cross pattern. Bake on 325F oven for 10 to 13
minutes, cookies will lighten in color and brown slightly around edges and
puff slightly. Remove from oven, allow to cool, enjoy.

*Variations: While mixing dough You can add 1/2 to 1 Cup of chocolate
chips, chopped nuts, butterscotch chips, bits o' brickle or any other type
of cookie "add-in" such as: m&ms the tiny ones work well in this recipe.

*You can get away without spraying the cookie sheet with no cook spray
if you wish, I prefer to use it, especially if I am adding chocolate chips to
the recipe, it helps lift the melted chocolate off the pan easier.
