This very basic recipe can be used with a multitude of fillings, just let your imagination run wild. Easy to make, fill with canned pie fillig or fresh fruit, makes for a nice presentation, and kids seem to love these.

Top with a dollop of whipped cream, or fruit and fruit sauce or both, makes a nice addition to a Sunday Brunch, or as a special breakfast for Mother's day or any special day. These are simple enough to make any day. Makes a wonderful light dessert.

Basic Crepes

1 cup flour

1 cup water

1 egg

dash of salt

Butter

Place all ingredients in blender, whip till smooth. spray crepe pan with non-stick cooking spray add about 1 teaspoon of butter allow to melt. over med heat, add about 1/4 cup of crepe batter to pan. turn pan sligtly to allow batter to cover the entire bottom of pan (to create a large flat pancake ). Allow to set, this takes only a few seconds (about 30 sec on medium heat), because of how thin it is, check bottom for very pale yellow to slightly golden color. top of crepe should be set and not runny, if not, your pan is too hot, reduce heat.

Repeat until all of batter has been used. Recipe can be doubled.

Serve with canned fruit filling, or fresh fruit, top with a dollop of whipped cream.
