Wine Sauce

Basic Wine Sauce is a nice way to fancy up a meal, the wine is a good conductor of flavor and livens up the taste of the sauce.  You have complete control in this recipe, If you are making a chicken dish, Use a white wine, If you are making a beef dish use red wine, When using a burgundy wine with this sauce over a beef roast you create a "Beef Burgundy" Style dish.

Basic Wine Sauce

1 can stock

1/2 to 1 cup wine

3 tablespoons Butter

3 Tablespoons Flour

1/2 tsp salt

1/2 tsp pepper

If preparing wine sauce for beef, Use beef or vegetable stock and preferably red wine.

If preparing wine sauce for chicken, Use Chicken or vegetable stock and preferably white or rose wine.

In a sauce pan, gently melt butter on med heat, add flour, stir, and cook on med low for about 2 to 3 minutes, making sure to combine ingredients well.

*Do not brown flour/ butter combination if you are creating a wine sauce for chicken. it's ok to brown lightly for beef.

Mixture will bubble. stir constantly, so it will not burn. Remove from heat, add wine, return to heat, stir to combine, mixture should become fairly thick. Use as whisk if needed to dissolve lumps, Increase heat to medium./ medium high to allow the alcohol to cook off.

Continue cooking stirring for about a minute or two. taste, to ensure alcohol has been reduced. Add stock about 1/2 cup at a time, Until desired consistency has been reached.

**Mixture will thicken some upon standing.
