Chicken and Rice
This Crock Pot Basic Chicken and Rice recipe makes a thick creamy chicken and rice dish that warms you from the inside out. You can fancy up this dish a bit by adding 1/2 cup white wine to the ingredients, since wine is a conductor of flavor, it helps to enhance the blending of tastes. Basic Chicken and Rice
1 1/2 lbs boneless/skinless chicken
1 can (4 oz) sliced mushrooms
1 1/2 cups rice ( long cooking)
1 can cream of chicken soup
1 1/4 Cup milk
2 Cups water
2 Tablespoons Butter
1 Tablespoon olive oil
1/4 cup flour
1 1/2 teaspoon salt
1 clove of garlic chopped finely
pepper to taste
Cut chicken intolarge chunks, combine flour salt and pepper, and lightly coat chicken, a plastic bag works very well for this.
Spray inside of crock pot with non-stick cooking spray, add oil, butter and garlic to crock pot, then the chicken, mushrooms, rice, cream of chicken soup, milk and water, stir gently to allow liquid to reach bottom of pot, cover, cook on low for 8 to 10 hours. the chicken will become very tender and may fall apart.
If the rice is too dry, add a bit more milk or water and allow to heat through before serving, about 10 minutes.
