Lucky Chicken
The Lucky Chicken is a take off on a meal I saw prepared on TV several years ago, It's a flavorful dish that resembles sweet and sour chicken.
Loaded with fresh crunchy vegetables, as well as flavor, it's a wonderful meat stretcher. A meal I am sure your family will love. Lucky Chicken
1 Lb boneless-skinless chicken cut into bite size pieces 1/4 cup flour 1/2 teaspoon salt 1/2 teaspoon pepper 4 ribs of celery 1 med onion 1/2 green pepper 1/2 yellow bell pepper 1/2 red bell pepper 1 1/2 cups ketchup 3/4 cup packed brown sugar 1 clove garlic chopped fine 2 tablespoons vegetable oil 1 cup water 1 tablespoon corn starch soy sauce
Combine flour, salt and pepper and pour into a large, plastic food bag, close and shake to combine, add chicken pieces, close bag, shake well to coat chicken.
Chop vegetables into bite size chunks.
In a large skillet or wok, heat oil till hot, add chicken, cook till slightly browned, remove to a plate or bowl.
Place chopped garlic and vegetables in skillet and cook for about 3 minutes, till cooked but still crunchy, add chicken, stir.
Add ketchup and brown sugar, stir to mix well, combine cornstarch and water and add to chicken/vegetable mixture, stir and cook for about a minute or until sauce thickens, If too thick add more water.
Serve over hot rice, sprinkle with soy sauce if desired.
The sauce will be translucent and reddish in color, it should be thick but not gummy.
Hints and tips:
This dish is very versatile, depending on the number of people you are feeding, you can increase the quantity of the meal simply by increasing the amount of vegetables that you add.
If you are not crazy about onions, try adding some chopped green onions instead, they will provide the flavor necessary to the dish without changing it's consistency.
If you want to give this dish a more oriental flavor, try adding about 1 teaspoon of toasted sesame seed oil to the cooking oil when frying the chicken.
