Chicken Cacciatore
This Chicken Cacciatore dish is also wonderful served with hot buttered rice, great flavor, wonderful texture, easy to prepare. Just a winner at my house.
This Recipe calls for Boness/Skinless chicken breast, This is our preference, You can prepare yours with chicken legs, thighs or Assorted chicken pieces, with or without bone and skin. Chicken Cacciatore
2 Large whole (Boneless/Skinless) chicken breasts cut into thick strips
1/2 medium red bell pepper
1/2 medium green bell pepper
1 large onion cut into medium slices
2 medium roma tomatos, peeled and cut into thick chunks
2 cloves garlic, crushed
1 tsp crushed red pepper (optional)
2 to 3 tablespoons tomato puree
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon pepper
Olive oil
Cooked Pasta
In a large skillet, over medium high heat, add olive oil, garlic, and crushed red pepper, cook for about 1 minute, add chicken strips and salt, cook for about 4 to 5 minutes or until no longer pink, add onion and tomato, cook for about 2 minutes, add red bell pepper, green bell pepper, tomato puree and sugar, and pepper stir to coat, cook for another 3 to 5 minutes, if mixture is too thick, thin with a few tablespoons of water, serve over hot cooked pasta
