Mini-Reubens
Mini-Reubens are my husband's favorite, small enough to hold on one hand, but filling and full of flavor.
Mini-Reubens are easy to make, quick and people tend to love them. Mini-Reubens
1 loaf cocktail rye bread (long skinny loaves)* 1 lb. shaved corned beef 1 lb swiss cheese 1 Can (14 oz) Sauerkraut (drained well)* 1 bottle thousand island dressing
Pre-heat oven to 350 F
Cover large cookie sheet with aluminum foil (easy clean up if cheese melts onto pan) Spray with non-stick cooking spray.
Arrange cocktail bread in a single layer on cookie sheet.
Spread about 1/2 to 1 teaspoon of thousand island dressing on each slice of bread.place about 1 teaspoon of sauerkraut over the thousand island on the bread.
Tear or cut corned beef to fit over each slice of bread and place on top of sauerkraut.
Cut slices of swiss cheese to fit over corned beef. (depending on the brand you are buying, each slice should make about 4-6 small slices to fit over minis)
Place in pre heated 350 F Oven about 5-8 minutes, or until cheese melts.
