Forgotten Cookies
These light and crispy "cookies" are actually mini meringues they crisp up in the oven, overnight, using the residual heat once the oven is turned off. They are delicious, and so simple. I love making these when I make a recipe that calls for extra egg yolks and I have the whites left over, rather than discarding them, I make a batch of Forgotten cookies.
I get to use the leftover egg whites, the left over heat from the oven and get a delicious treat for my minimal effort, this cookie is definitely a win, win. Forgotten Cookies
2 Egg whites 3/4 Cup sugar 1 cup chopped nuts 1 cup chocolate chips
Beat eggwhites until foamy, add sugar and beat until stiff. Gently fold in nuts and chocoalte chips, Place into a pre-heated 350F oven, then shut it off. Leave in oven overnight. No PEEKING! This recipe makes about 3 to 4 doz cookies. Store in a tin or a box, not plastic.
