Cinnamon Pinwheels
This is a cookie my mother-in-law used to make for my husband when he was a child, he still loves it to this day.
This is definitely and old fashioned cookie, simple as can be The spicy cinnamon scent fills the air while they bake. The flavor is lightly sweet with the slight bite of cinnamon, these cookies fill your senses in so many ways.
A perfect addition to your Christmas cookie list, but... These are awesome in the fall with a cup of hot cider. Cinnamon Pinwheels
2 1/2 cups flour 1 cup shortening 1/2 teasp salt ice water
*Softened Margarine *Sugar *ground cinnamon
Combine flour and salt, stir lightly with fork, cut in shortening until blended and begins to hold slightly, begin adding ice water one tablespoon at a time until dough forms and holds a shape, do not over water your dough, if it seems a little dry, cover with plastic wrap and refrigirate for 1 hour, the dough should hold well and be easy to roll. Roll dough into a long rectangle, about 10 inches wide. Spread with softened margarine to within an inch of the long end of the dough, sprinkle with sugar, then sprinkle with cinnamon, maintaining that inch at the end of the dough, begin at the side where all dough is covered in sugar and cinnamon and roll dough into a long roll, when you get to the end where the dough was uncovered with filling, dip your finger into a bit of the ice water and gently dampen the edge of the dough, contiue rolling, apply light pressure at end to seal. cut into 1/2 inch rounds, bake at 325F on a greased or parchement paper lined cookie sheet for about 12 to 15 minutes. Makes about 3 doz.
Ammounts are not specified because you sprinkle as much as you like, though I suggest you add sparingly, as the filling will ooze out upon rolling into a log. |
