Quick Chicken Parmessan
This dish is quick because you make it using ready made frozen chicken patties. which also makes it rather economical. The entire thing comes together in less than 20 minutes.
Quick Chicken Parmesan
4 to 6 frozen Chicken patties 4 to 6 slices mozzarella cheese or Provolone to equal the number of chicken patties you are using 1 (26 to 29 oz) Jar Pasta sauce Parmessan cheese 1 medium tomato, thinly sliced 2 Tablespoons olive oil optional 1 sm Garlic clove, crushed.

In a large frying pan, heat oil over medium high heat, gently brown chicken patties, turning once, (about 3 to 4 minutes each side) remove from pan and add crushed garlic, and red pepper flakes to hot oil. cook for about 1 minute, add entire jar of pasta sauce to pan, use about 1/4 to 1/2 cup of water if too thick.
Return chicken patties to pan, placing on top of sauce, Top each patty with a thin slice of tomato, and a slice of cheese. Gently spoon a bit of sace over each patty, cover and simmer for about 10 minutes. Sprinkle top with parmessan cheese, serve hot
