Turkey Quesadillas
The entire point of this dish was to not let the turkey taste too much like turkey, so that the leftovers didn't taste like the same dish you had been eating for the past week.
.This dish was a big hit for all that tasted it, many didn't realize it was even turkey, and I used the leg meat, which my family isn't crazy about. Yet all loved it, especially my 2 year old grandson Joshy
Turkey Quesadillas
4 cups Shredded Turkey 2 Cups Shredded Cheese 10 large flour tortillas 1 can refried beans taco sauce 2 Tablespoons Taco Seasoning 1/2 teaspoon cumin 1 teaspoon chili powder olive oil
Toss turkey, Taco seasoning, cumin and chili powder until coated, Heat in microwave for 2 minutes.
Heat large frying pan over medium low heat. Lightly brush one side of flour tortilla with olive oil, place in pan, sprinkle about 1/3 cup of shredded cheese over tortilla, spread evenly.
Place about 3/4 cup seasoned turkey over cheese.
Spread about 1 to 2 teaspoons of taco sauce over 2nd tortilla, spread with about 1/4 cup of refried beans, place on top of turkey, cheese covered tortilla and brush lightly with olive oil, When the cheese begins to melt and the bottom tortilla begins to brown light to golden turn tortillas so that the top tortilla is now on the bottom. Heat till light to medium brown.
Cut into 4 or 8 slices, serve with sour cream, taco sauce, chopped olives, or green onions.
