AMERICAN SWEET CORN SALAD

Cooking Time : Nil.
Preparation Time : 10 min.

Serves 6.
            Ingredients
              
    2 teacups sweet corn
      
    1/2 teacup diced spring onions (with green stems)
      
    1/2 teacup diced capsicum
      
    1/2 teacup diced tomato
 
      For the dressing
              
    vinaigrette dressing
 

  
            Method
              
    
      1.
    Keep aside half the tomatoes and spring onion greens and mix the remaining salad ingredients.
      
    
      2.
    Toss in the dressing.
      
    
      3.
    Garnish with the remaining tomatoes and spring onions.
      
    
      4.
    Put in the refrigerator.
      
    
      5.
    Serve cold.
