Reuben Sandwiches
The Reuben, Simple to make, delicious to eat, this hearty sandwich will satisfy even a manly appetite. A great alternative for the Corned beef and cabage meals traditionally served on St. Patrick's day.
Reuben Sandwiches
8 slices of rye bread * 1 lb. shaved corned beef or sliced 1 lb swiss chesse 1 Can (14 oz) Sauerkraut (drained well)* 1 bottle thousand island dressing (Miracle whip style) salad dressing
Makes about 4 sandwiches
Pre-heat frying pan at medium heat, spray with non-stick cooking spray. Spread (miracle whip type) salad dressing over one side all 8 slices of bread, covering evenly.
Place 4 slices "spread side down" on the pan. (the side with nothing on it will be facing up) set remaining slices aside.
Place one slice of swiss cheese over bread in pan, fold if needed to keep cheese from hanging over bread.
Place about 1/4 cup of sauerkraut over cheese, and top with 1/4 of the corned beef.
Peek at the bottom of your bread in the pan to check for browning, if browning too quickly, lower heat move pan away from heat to prevent burning and allow pan to cool slightly.
Top your sandwich with remaining slices of bread, spread side out, and gently flip your sandwich on your pan. If anything oozes, out, just scoop it back in. cook till light to medium brown and the cheese melts. remove from heat, spread about 1 tablespoon thousand island dressing into sandwich.
Serve hot.
