Ham Salad Subs
are a great way to use up any leftover ham, this recipe also works well with leftover chicken or turkey.
This recipe produces a creamy but crunchy ham salad that is sure to please and offers the variation of hot and cold to tempt any palate.
If using it with chicken, or turkey, try adding a handful or almonds or walnuts, and some seedless grapes or raisins for an added dimension
Ham Salad Subs
2 to 3 cups ham cubed or chopped 1 (8 oz.) pack cream cheese Softened 1 small onion chopped fine 2 to 3 ribs of celery chopped fine 1/4 red bell pepper chopped fine 1 1/2 tsp. minced garlic or 2 small garlic cloves chopped fine. 1 cup mayonaise or salad dressing 2 Tablespoons dijon mustard 8 oz. shreded cheddar cheese 1/4 cup finely chopped fresh parsley or 2 Tbsp. dried parsley Kaiser rolls
makes about 6 to 8 servings broiler on low
In a mixing bowl beat cream cheese till smooth. combine cream cheese, onion, celery, pepper, garlic, mayo and mustard, beat on low until well combined. fold in ham and parsley. Cut kaiser rolls and place cut side up in broiler for about 1 minute or until lightly brown. Spread ham mixture on bottom halves of Kaiser rolls and sprinkle with shreded cheddar, return to broiler unitl cheese melts.
